A slight departure from some of our more fruit forward Cabernet Sauvignons, this 7 Hills Cabernet Sauvignon displays primarily earth driven aromas. Black olive, mushroom, leather, and dried cherry, layered in with herbs, cedar and cigar box. The palate is decidedly savory, rich saline minerality, grilled portobello, and warm baking spice with hints of toffee. Full-bodied and textural, this wine carries firm structure through a long, smooth finish. This Cabernet will shine brightest alongside meals like venison, steak, roasted lamb, or hearty mushroom dishes.
